Abstract: 本研究では,薬膳の科学的評価を試みた。評価のための薬膳のモデルとして,生薬ニンジン入り薬膳パンのニンジンパン,ケークサレ,スコーンを作製した。渡辺 武氏によって考案された漢方医学の気血水理論に基づくレーダーグラフ法によって薬膳パンの効能効果を解析すると,ニンジンパンは体を冷やしかつ温める作用が強く,ケークサレは血の不足や血の滞りを正常に戻す作用が加わり,スコーンは全体的にバランスが良く,血の不足や滞りを正常に戻す作用もある,と推測できた。官能検査(20名のパネリスト)を実施し,ケークサレやスコーンは味や総合評価が高くなることが確認された。機器のテキソグラフを用いて食感を評価すると,ニンジンパンが最も高かった。薬膳パンの生薬ニンジンの有効成分のジンセノサイド類の量を調べると,全ての薬膳パンから検出され,薬膳パンの有効性を支持することができた。In this study, we attempted to scientifically evaluate“Yakuzen (dishes specially prepared for medical purposes)”. We made three types of bread prepared with the crude drug ginseng (bread, cake salé and scone) as an evaluation model for“Yakuzen” . Using the radar chart (= radar graph) method established by Takeshi Watanabe, which applies the theory (life is based on vital energy, blood and body fluid) of Kampo medicine, we estimated the positive effects of breads. The results showed that ginseng bread strongly cools down and warms up bodies. Cake salé is also effective in restoring blood deficiency and blood stagnation to normal. In addition, scone showed a good balanced radar graph pattern. In sensory tests (20 panelists’ evaluation), it was confirmed that cake salé and scone had higher taste and overall evaluations. In the texture analysis by TexoGraph (instrumental evaluation), ginseng bread was the highest quality of texture. We examined the contents of ginsenosides (active ingredients of ginseng) in the bread prepared with the crude drug. Ginsenosides were detected in all breads, supporting the effectiveness of the breads.
