抄録: A survey on food education was conducted at a center for early childhood education and care in T city. The results are as follows, 1. The unique food education carried out at the center focused on the cultivation of rice and sweet potatoes, and making miso. 2. The food education activities placed an importance on the children’s autonomy and they worked on cultivation from working the soil and the children carried out the activities while being aware of their 5 senses. 3. The devised cultivation activities were implemented in locations with a disadvantaged environment. 4. Parents were enthusiastically guided on food education. These activities are considered to suggest a way to develop food education in pre-primary schools in the future.</description>

抄録: We investigated the contents of major active ingredient diosgenin and toxic ingredient dioscin in 6 products of Wild Yam supplements by HPLC. The diosgenin was at the level of ND (not detected)～90.2 mg/g, and the dioscin was at the level of ND～13.3 mg/g. The intake of diosgenin and dioscin for one day were 0.43～45.1 mg/ day and 1.4～15.9 mg/day, respectively. Toxicological studies have shown that dioscin causes hemolysis and vomiting in humans. Therefore, the possibility of excessive intake of dioscin from Wild Yam supplements should be considered.</description>

抄録: “Japanese Food Guide” categorizes food into five categories using the unit “serving (SV)” and the SV provides a reasonable description of dietary balance of a meal for healthy Japanese. The study aimed to study between SV and visceral fat accumulation in middle-aged Japanese men without obesity. This study investigated 431 non-obese men, with no medication who had undergone a health check-up, and BMI and visceral fat area was determined. A food frequency questionnaire based on food groups (FFQg) was used to obtain a detailed assessment of food intake and physical activity levels. We investigated a relationship between “estimated SV (eSV)” calculated from FFQg and physical activity, and visceral fat accumulation. In men with BMI&lt;25, the average eSV of meat/beans and snacks and beverages was significantly higher and the average eSV of milk/milk products was significantly lower than those of the group without visceral fat accumulation. It is suggested that visceral fat accumulation was related with food group intake evaluated by eSV. “Japanese Food Guide” may be useful for nutrition guidance for improving visceral fat accumulation.</description>

抄録: The purpose of this research was to explore the situation of the unbalance diet of elementary school children in an urban area in China. A questionnaire was conducted among 814 parents of children from two public elementary schools in 2015. Approximately 80 percent of children had some disliking foods. Vegetable accounted for the most detestable food and the primary factors for the detestable food were taste, smell and texture. Unbalance diet was significantly related to exercise and bowel habit (p＝0.048, p＝0.031). High unbalance diet group had significant higher ratio of undesirable eating habits, undesirable dietary awareness and dietary behavior. The unbalance diet was significantly related to physical condition, family meal. High unbalance diet group showed a higher ratio comparing to the low group of children who tend to be thin as well as eating breakfast alone (p＝0.030, p＝0.020). Furthermore, unbalance diet of children was significantly related to unbalance diet of parents (p＝0.025). Educational background, dietary awareness and dietary knowledge of parents were significantly related to the countermeasures about the unbalance diet of children. Parents who had higher education, good dietary awareness and dietary knowledge improved an unbalance diet of children proactively. The findings of this study provide details about the context and relevant factors of the unbalance diet of children. In order to improve the situation of the unbalance diet, reduce the proportion of picky eating and develop desirable of the children, it is necessary to promote food and nutrition education for both children and parents in China.</description>
